    1 ceramic Pie Bird Salvation Army Lassies used Pie Birds during WWI A pie bird is a ceramic object, not always shaped as a bird, used in a pie, placed on the bottom crust. The pie is then filled, the top crust is then applied over the object, , and sealed. Because the pie bird is vented, top and bottom, steam escapes during the baking process, which prevents the juices from spilling out between the top and bottom crusts.
